Roasted Zucchini Salad

Ingredients -

5 zucchini

Extra virgin olive oil



2 sprigs of thyme

½ cup walnuts, chopped

½ cup mint leaves, chopped

⅓ cup raw tahini

3 tablespoons yogurt

Lemon juice

Step-by-Step Instructions:

1. Preheat the oven to 425F.

2. Wash and dice 5 zucchini.

3. Lay them flat on a lined baking tray. Drizzle the zucchini with olive oil and sprinkle with salt, pepper, and thyme.

4. Gently toss with your hands and roast for 10 minutes, tossing again halfway through.

5. Once the zucchini is ready, remove the thyme stems and place the roasted zucchini in a bowl.

6. In the bowl, add raw tahini, walnuts, mint leaves, yogurt, and lemon juice.

7. Mix well and enjoy.
