Orange Vegetable Soup Recipe
6 tbsp olive oil (and some for garnish) 1 onion, chopped 2 celery sticks, chopped 2 cups carrots, chopped 4 cups sweet potato, chopped 4 cups squash, chopped Salt Pepper 1 tbsp chicken broth powder 2 tbsp ginger 6 cups water 2 oz butter Pumpkin seeds
In a large pot, cook 6 tbsp olive oil and 1 chopped onion, on medium-high heat, until the onion becomes fragrant.
Then, mix in the chopped celery, carrots, sweet potato, and squash. Season the vegetables with salt, pepper, chicken broth powder, and ginger.
Add 6 cups of water (or enough to cover the vegetables) and bring to a boil. Cover and cook on high heat for 20 minutes.
Add butter to the boiling soup and mix. Then, reduce to a simmer and cook for another 5 minutes.
Remove from the heat and allow to cool.
Blend the entire soup until smooth.
Garnish with olive oil and pumpkin seeds.
