Orange Vegetable Soup Recipe


6 tbsp olive oil (and some for garnish) 1 onion, chopped 2 celery sticks, chopped 2 cups carrots, chopped 4 cups sweet potato, chopped 4 cups squash, chopped Salt Pepper 1 tbsp chicken broth powder 2 tbsp ginger 6 cups water 2 oz butter Pumpkin seeds

Step-by-Step Instructions

  1. In a large pot, cook 6 tbsp olive oil and 1 chopped onion, on medium-high heat, until the onion becomes fragrant.

  2. Then, mix in the chopped celery, carrots, sweet potato, and squash. Season the vegetables with salt, pepper, chicken broth powder, and ginger.

  3. Add 6 cups of water (or enough to cover the vegetables) and bring to a boil. Cover and cook on high heat for 20 minutes.

  4. Add butter to the boiling soup and mix. Then, reduce to a simmer and cook for another 5 minutes.

  5. Remove from the heat and allow to cool.

  6. Blend the entire soup until smooth.

  7. Garnish with olive oil and pumpkin seeds.
